First Blog!

So this is my first blog. I thought I'd set up a blog to record thoughts and pictures of me going through culinary school but so far (half way into the semester) I haven't attempted. So here goes.

Culinary school is a lot harder than I thought, it's not just cooking and tasting. There is a lot of math (conversions), reading, studying and effort involved. I'm impressed with people that actually attempt and finish. A huge bonus on my part is I have all of the core classes so besides math, most of my classes are actually cooking classes; minus the business and sanitation/health classes required. I'm trying to take all of the harder classes first and hoping to coast through the end with the easy and fun cooking classes. Even after I have my degree and certification, there are tons of follow up classes I could and plan on taking or hope to!

I love my Basic Food prep class. My team, Matt and Greg are awesome. With humility I might add, we really are the best in our class. We all made high A's on our midterms, which included a cooking practical! We cook really well together, and they make up for my math conversion deficiencies. I HAVE to get better at the math part. It's not so much the math as the equivalencies, ie 4 cups in a qt, __ oz in a lb. All of that is just memorization and I haven't worked in a kitchen before (they both have) so their more familiar with it. Anyway all that will come with time and practice.

I keep getting requests to cook for people ever since I started school. I actually knew how to cook really well before. Guess going to culinary school gives me more credibility with people. Hope it works out the same when I go for a job somewhere!

So that's about it for now with school. Oh, most everything we've cooked ie, cream of mushroom soup, home made onion rings, baked acorn squash, eggplant Parmesian, mac&cheese sauce, shrimp bisque, hollandaise sauce, corn chowder, ratatouille, tomato sauce, cream of broccoli, french fries, asparagus and countless other things have been amazing!

  2. hey! I also wanted to tell you....You should blog about helpful things like the guac stuff you were telling me and Tim and any other helpful ideas. That would be fun. You could even blog with pictures of like what you are talking about. just an idea
